40 Meatless Meals - Spinach Lasagna

1 lb. Monterey Jack cheese, shredded
8 oz. lasagna noodles, cooked
1 cup grated Parmesan

Mix together:
2 (10 oz.) packages frozen, chopped spinach, drained well
2 lbs. cottage cheese, well drained
2 raw eggs
1 tbls. parsley
1/2 c butter
salt, pepper and garlic powder

Prepare a 9X13" pan with cooking spray and place two layers as follows:
  1. Noodles
  2. Mixture
  3. Monterey Jack cheese
  4. Parmesan cheese
Bake at 350 degrees for 30 minutes, uncovered.
Optional: I pureed the cottage cheese, eggs, parsley, butter and seasonings in a food processor before mixing with the spinach for a smoother texture.
