This isn't really a recipe, but I would like to point out a product that makes meatless cooking just a little easier. Textured vegetable protein is a soy product that, when rehydrated, has a texture similar to ground beef. It takes on the flavor of your seasonings and works particularly well in recipes such as chili, tacos, and casseroles. I purchased this 10 ounce bag in the organic section of my local grocery store and for only $2.89 and it makes 11 servings.
