40 Meatless Meals: Roasted Pepper Pizza

Sicilian Bean Salad (Serves 2 as an entree, 4 as a side)
Adapted from We Called it Macaroni
My husband, who is a meat and potatoe sguy, really enjoys this salad for a weekend lunch.

1/4 c extra virgin olive oil
red pepper flakes
2 minced garlic cloves
2 T red wine vinegar or sherry
1 can white beans, drained
1 can diced tomatoes, drained
1/4 cup fresh mint leaves

Mix olive oil, salt, pepper flakes, garlic, and wine together. Fold in beans, tomatoes, and mint leaves. Let rest at room temperature at least 10 minutes before serving.

Roasted Red Pepper Pizza (serves 4-6)
pizza dough
2 oz cans tomato sauce
1 jar roasted peppers, well drained
1 cup cheese
1/2 cup diced fresh basil

Preheat oven to 425.

Spread pizza dough in greased pan. Spread tomato sauce over crust. Arrange peppers over sauce, trimming any large peppers down to a manageable size.

Bake for 15 minutes; sprinkle cheese over the top, and bake until cheese melts. Sprinkle with fresh basil before serving.
