This meal is really easy to prepare on a griddle or electric skillet where you can cook everything at once
For every 2 servings:
2 sweet potatoes, grated and liquid pressed out
1 egg, beaten
1/4 cup flour
pinch of salt and pepper
oil for frying
Combine all ingredients thoroughly; shape into pancakes and fry.
1 apple, cut in wedges
1 red onion, cut in rings
oil for sauteeing
Sautee apples and onions; serve with pancakes.
