A quick and easy breakfast for dinner.
For every person:
oil or butter to grease the pan
1/2 a sweet potato, peeled and cubed
1/4 cup cheese
salt and pepper
Heat oil in skillet. Sautee potato cubes until mostly tender (about 5-7 minutes). Move potatoes to one side of the skillet. Break in two eggs, prepare as desired (sunny side up, scrambled, etc). When eggs are almost done, sprinkle potatoes with cheese, and let it melt slightly. Season with salt and pepper to taste.
