1 onion, chopped
2 cloves of garlic, minced
1 (28 oz.) can chopped tomatoes
2 (15 oz.) cans vegetable broth
1 (11 oz.) can V8
1 c. chopped cabbage
1 c. frozen green beans
1 (10 oz.) pkg. frozen chopped spinach, thawed
1 stalk celery, chopped
1 c. carrots, chopped
1 can kidney beans
1 can garbanzo beans
1 tsp. oregano
1 tsp. basil
1 c. elbow macaroni
1 bay leaf
1-2 drops of liquid smoke (optional)
salt and pepper to taste
Cook onion and garlic in a small amount of butter until tender. Stir in remaining ingredients except pasta. Heat to boiling. Reduce heat; simmer 1 hour, covered. Stir in pasta and cook 10 minutes or until tender. Remove bay leaf.
