40 Meatless Meals: Tomato Basil Soup


1 medium onion
2 Tbsp butter
2 cans diced tomatoes
2 cans tomato soup
1 1/2 cups milk
1 tsp sugar
1 tsp dried basil
1 tsp paprika
1/4 tsp garlic powder
1 8 oz package cream cheese, cubed

Saute onions in butter. Stir in tomatoes, soup, milk, and spices. Bring to a boil. Reduce heat, cover, and simmer ten minutes. Stir in cheese until melted.

Pious Sodality of Church Ladies, thank you so much for this recipe! My mother and I just tried making it this evening, and it is wonderful.

I am undergoing chemotherapy, so food is really difficult for me. This recipe is going in the box of things I actually feel like eating.

On Fridays during Lent, my church does a meatless soup dinner before Stations of the Cross. I think we will be bringing this soup to share with everyone.
