40 Meatless Meals: Roasted Cauliflower

2 T olive oil
3 cardamom pods
1 t cumin seeds
1 t mustard seeds
1/2 t red pepper flakes
1 head cauliflower, chopped into florets with branches
1 bell pepper, cut in strips
1 small onion, cut in rings
kosher salt and pepper

Preheat oven to 450. Spread olive oil in a shallow baking dish. Stir spices into oil. Fold in vegetables. Bake for 20 minutes. Season to taste with salt and pepper.

Serves 4 as a side.
