40 Meatless Meals: Polenta Stuffed Peppers


For 4:

1 cup of cornmeal
1 t olive oil
2 cloves minced garlic

4 Italian or red bell peppers

1 can corn
1 can black beans
1 cup cheddar cheese, grated

Preheat oven to 375.

Prepare 1 cup cornmeal into polenta. Stir in olive oil and garlic.

Spread polenta over peppers. Bake 20 minutes. Top with corn, beans, and cheese.
