Hint of the Day - Making rolled cookies

We almost never make rolled cookies at Christmas time, but every year on Valentine's Day we have a tradition of sending some to work with our beloved Valentine, Dad. I used to think it was a huge pain to roll the dough, cut the shapes, transfer them to a pan and still try to keep my gingerbread man's head from breaking off or the hearts from becoming misshapen beyond recognition, (Too much flour on the rolling surface and the cookies are tough. Too little and they stick.) until a friend cheerfully volunteered to make dozens for a church event and shared her secret with me.

Roll your dough out on a sheet of parchment paper and just remove the extra dough after you cut your shapes. You don't have to move the cookies at all until you remove them from the paper after baking. Perfect shapes every time! Now go celebrate Saint Valentine's Day and bake for someone you love!

Also, you can use the same sheet of paper several times.

Oh my goodness. That may be the single best use of parchment paper I have ever heard.

Now, if only I could bake my pie crust on paper...
